What Speed and Setting Should I Use?
Mixer Speed
All rolling and cutting should be done at speed 4
Changing the dough thickness
The adjustment knob turns counterclockwise. Each setting will click into place.
Important to note: The adjustment knob only turns in one direction. If you pass the desired setting, continue turning the knob simply turn the knob until you reach your desired setting.
Roller Settings
This attachment is primarily designed for pasta dough. However, it can also be used for other types of dough, including dumpling wrappers, flour tortillas, phyllo dough, pizza dough, naan, and roti, and even non-dough items like fondant.
| Roller Setting | Suggestion Uses |
|---|---|
| 1 or 2 | Kneading and thinning dough |
| 3 | Thick "kluski-type" noodles |
| 4 | Egg noodles |
| 4 or 5 | Lasagna, Fettuccine, Spagettii and Ravioli |
| 6 or 7 | Tortellini, Thin Fettuccine, and Linguine Fini |
| 7 or 8 | Very thin "angel hair-type" pasta/capellini or very fine linguine |
